Born on the bustling Bourbon Street in New Orleans, Fat Tuesday’s story is one of capturing the essence of Mardi Gras and bottling it into a party-in-a-cup. In a strategic move to broaden its brand, Fat Tuesday selected a beachside location across from the Fort Lauderdale Beach just south of Sunrise Boulevard and A1A for their daquiri bar. It was a location rich in potential but laden with challenges. Danto Builders was contracted for the complex undertaking of converting an old beachfront space, previously a 2nd or 3rd generation deli, into a modern, code-compliant establishment aligned with Fat Tuesday’s vibrant image.

Navigating Early Obstacles: Seamless Transition in Management

The project kicked off with an unexpected shift in project management, a challenge Danto Builders handled with exceptional professionalism and effective communication, which was especially important since the client was coordinating from a distance.

Expedited Renovation Under Unique Conditions

Set in a small space on the beach, the project demanded a swift, 60-day turnaround. The location’s previous life as a long-standing deli meant dealing with outdated structures and systems, all needing updates to meet the new codes.

Comprehensive Structural Overhaul

Upgrading Essential Systems:

The site required a complete change-out of the existing service and electrical panels, mechanical, and AC systems to adhere to modern standards.

Roof and Compressor Installation:

Addressing the poor condition of the roof was crucial, especially as it needed to support new RTU roof top air conditioning units and compressors for the daiquiri machines. These machines, vital to Fat Tuesday’s operations, were placed on the roof due to the heat they generate.

Cooling System and Kitchen Refurbishment:

The walk-in cooler fridge was in a state of disrepair. Danto Builders constructed a new box and refurbished the existing cooler to ensure functionality and cost efficiency. Remarkably, the only original element retained was the kitchen hood.

Utility and Flooring Challenges:

Collaborating with Florida Power & Light (FPL) posed its own set of challenges, especially given the rapid pace of the project. Fortunately, their electrical subcontractor was able to help expedite the process with FPL. The flooring, originally built like a wooden deck and prone to collecting debris and insects, was completely demolished and repoured to match the existing elevation.

Interior Customization and ADA Compliance:

Once the major structural and utility work was completed, Danto Builders focused on Fat Tuesday’s specific interior requirements. This included customized cabinets and countertops in brand-specific colors and designs. An unexpected issue arose with the front door not meeting ADA compliance, leading to the addition of new, compliant doors after the store’s opening.

 Enhanced Maintenance and Operational Features:

Recognizing the demands of a beachside location, Danto Builders mounted and installed a 50-pound, 50-foot retractable hose for easy cleaning of the store. This required opening the wall to add the backing and support for the weight of the hose.

 Culinary Adaptations: Grease Trap Integration:

To accommodate the limited menu and tie into the local sewer system, an under-counter grease trap was added – a critical addition based on the field conditions.
